Chicken Stroganoff

Ted and I decided to live on a tighter budget for a while and we are making crazy progress by just cooking at home more often!! It's actually really fun, too! Last night I decided to make us a big fancy meal (also easy), and it turned out so tasty! It's not the healthiest meal we've ever made, but mmm was it good!

Ingredients

2 strips of bacon
1/2 onion, chopped
1/2 C sliced mushrooms
3 Tbs flour
1/2 C low-fat milk
1/2 lb chicken breast, sliced
2 C whole wheat pasta
Dash of Worcestershire
Salt, pepper, chili flakes, etc., to taste

How To

Cook pasta at the same time as the steps below!
Cook the 2 strips of bacon until crispy in a pan, and then remove the bacon.
Sautee the onions, mushrooms, and chicken in the reserved bacon fat until cooked.
Remove all of that from the pan, leaving the juice, and put in a little bit of flour to create a roux, and then add the milk slowly. When it starts to thicken, add a dash of Worcestershire sauce and salt and pepper.
Throw the veggies and chicken back in the sauce, and pour over pasta. Voila!

The above ingredients serve 2 for 14 WW points each, but you can make it healthier just by eating less of it! Ted and I probably ate about 2 "average sized" helpings each, and had we had a side dish or a little salad, it would've been much healthier ;)
