Thanksgiving Part 3: Kale and Cranberry Couscous

I like this dish because it's tasty, actually really healthy, and adds a little twist to thanksgiving while keeping in the spirit - there are cranberries!

Ingredients:
2 C water
1 box couscous (I use the pine nut flavor but plain works too!)
2 oz pine nuts
1/2 lb kale
2 T olive oil
1 medium shallot, peeled and thinly sliced
3 oz dried cranberries
1 tsp chili flakes
1 tsp salt

How to:
Prepare couscous with water as it says on the box ;)
Toast pine nuts 5-7 minutes at 300
Remove stems and finely chop kale
Heat olive oil, add shallot until translucent, about 2 minutes.
Add kale and cranberries, stir and leave to cook, covered, 5 minutes.
Add pine nuts, chili flakes, salt, and stir, cover 5 minutes.
Toss with couscous in medium bowl and serve immediately or at room temperature!

This dish is really great even cold, it's the only thing I could stomach (pun intended) after I'd stretched mine out today... It felt like an overinflated balloon that was slowly losing its mass and it needed just a little something to fill the void ;)
