Italian Soup


Tonight I made incredibly tasty soup, if I do say so myself!! I'm calling it Italian but really it's just veggie, sausage, and tomato broth, and very good! It makes approximately 8 servings, heats up amazingly later, and also is incredibly healthy! The least healthy parts are the sausage and olive oil, but even then it's spread out across so many servings that it's just fine if you're dieting.

Ingredients

2 tbsp olive oil
1.5 onions
3 carrots peeled and chopped
3 celery stalks, chopped
3 cloves garlic minced
1 qt chicken broth
1 can crushed tomatoes
1 can navy beans
2 yellow potatoes sliced
3 links Italian sausage 
1 stem rosemary
1 bay leaf
1 bunch kale chopped

How to:

Sautée onions, carrots, and celery in olive oil over medium heat until translucent, about 10-15 minutes. Add garlic and heat until fragrant, about one minute. Add chicken broth, tomatoes, beans, rosemary and bay leaf, heat approximately 15 minutes. In a separate pan, remove the sausage from the casing and brown. Once cooked, add sausage and kale to the soup and cook 10 more minutes. Turn off heat and let sit, covered, until ready to serve.
