Last night we decided to be healthy and make soup that is only 2 (TWO!!) WW points! So exciting, I even ate it for lunch today and have yet to turn orange from all the carrots :)
1 onion roughly chopped
Zest of 1 orange
Juice of 1 orange
1 lb carrots, peeled & roughly chopped
2 bay leaves
1 32oz carton chicken / veg. stock
1 – 2 cloves garlic, minced
Salt & pepper to taste
Sauté onions, minced garlic & carrots for about 5 minutes, until onions are soft (don’t allow to caramelize)
Add zest of orange & cook for another minute or so
Add chicken / veg stock, bay leaves & orange juice & bring to a slow boil, cover & simmer gently for about 20 minutes or so, until carrots are soft.
Puree (after taking out the bay leaves!!) and add salt & pepper to taste, serve!
We added chopped cilantro on top!
