Red Pepper Turkey Burgers
After Thanksgiving we had a leftover uncooked 2 lb turkey roast which we had no clue what to do with... I remembered, hey, I've got a meat grinder attachment to my Kitchenaid mixer and never used it!! (Except once to further grind ground beef, just to see if it worked... It did!) It was actually really fun and exciting to ground unground meat, and now we have 2 lbs of fresh (frozen) turkey meat! I took no pictures because frankly it looked a little icky, but trust me! It's a great attachment!!
Tonight we made super tasty spicy turkey burgers with our fancy schmancy meat :)
Ingredients:
1 lb ground turkey
1 clove garlic, finely chopped
1 shallot, finely chopped
1/2 red bell pepper, chopped
Salt and pepper to taste
Dash of worcestershire
Dash of soy sauce
1 egg
Mix all of the ingredients above with your hands (hmm I should've named these zombie burgers, it's kind of what it's like!), divide in fourths, and cook on the stove over medium heat for 10-15 minutes.
We served them on whole wheat buns with sliced tomato, a leaf of spinach, sriracha sauce, and low fat ricotta spread! Very tasty indeed!! And with regular turkey (not the 99% fat free kind you can get at the grocery store), including buns and cheese it was 10 WW points! Would've been 8 with the lower fat spread :)
