Mint Pesto Chicken and Spaghetti Squash

Tonight I decided to experiment with mint pesto, but healthy... I will say at first bite it was a little odd! But by the end I was incredibly happy with my choice!!

Ingredients (serves 1, Ted was working late!)

4 oz boneless skinless chicken breast
4-5 sprigs mint leaves
2 tsp olive oil
1/8C pistachios 
1 clove garlic
Juice of 1/2 lemon 
1/2 spaghetti squash
Salt and pepper to taste
