Watermelon Feta Salad

Some friends were having a BBQ birthday party and I wanted to bring something summery that would go well with grilled food, and also wasn't terribly heavy. This salad proved to be just that! It was super tasty and also makes a TON of servings! I only used half of what the recipe calls for below and we had 12 people and still didn't eat it all!

Ingredients

Juice of 1 orange (~1/4 cup)
Juice of 2 lemons (~1/4 cup)
1 large shallot, minced (~1/4 cup)
1 tablespoon honey
1/4 cup olive oil
Salt and fresh ground pepper to taste 
6 cups baby arugula
Seedless melon, cubed or balled (~2.5 cups)
12 ounces crumbled feta cheese
1 cup whole fresh mint leaves, julienned

 

How To

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.  Mix arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Serve immediately!
